Tomatoes/Spinach/Cheese Quiche

My week of cooking was a little different this week for a couple of reasons. I doing some last minute things for Aryana's birthday party and the weather was gloomy so unfortunately all my motivation was not in the kitchen. However, I did pull off some really good meals that were quick and easy and most importantly got the stamp of approval for my family. On Thursday I did not put anything in the crockpot nor did I go to the store, so when I got home I thought what can I put together that is healthy, fresh and simple..

Tomatoes, spinach, and cheese Quiche

I had grape tomatoes that needed to be used.

8-10 grape tomatoes (sliced or cut up)
Fresh Spinach (sauteed in pan prior) I used a good amount
Parmesan Cheese
Pie Crust (I did not have enough time to make my own)
4 Egg Whites
Salt and Pepper to taste (I did not use any)

Line the pie crust with parmesan cheese then put the spinach on top of cheese. Blend the 4 egg whites in a bowl before pouring them on top of the spinach. Then on the top place the tomatoes. Place in oven at 350 for 45 minutes. At the last five minutes I sprinkled a little more cheese on the top.
So I put the meal on the dinner table and my husband said what is this, I said a quiche his immediate response, gross. I said please try it. So he did and needless to say the whole quiche was gone he loved it..
